Not really sure why, just been told wider is better because it's less likely to fall over.

It's only likely to fall over if you lift your sj too much or can't drive But yes accidents happen, Roll overs are mostly caused by sudden weight transfer during off camber situations and 30-50mm of extra width is going to make very little difference between rolling and staying upright in reality.
If you are on standard wheels then some after market wheels with -30 offset is money much better spent than wheel spacers in my opinion.

Yep I've already got those wheels. They have been cut and rewelded with a bigger offset.
Also, how do you all you guys deal with defender sized tracks when your off roading.

Most of the time you end up riding part way up one side which od actually a fair advantage.
Never end up fully on top of one side but more just riding slightly up the edge of it on the inner edge of the tyre.

As dan says I would rather not fit in their ruts. It gives you an advantage over la get vehicles....they ground out on their diffs and you just carry on driving through
