electric fan details

Im currently in the process of fitting an electric cooling fan, im using a top hose off a escort with a peugeot 206 thermostat switch to control it turning on and off, will this do or will i need another manual switch and anyone got the best way to wire it up?

You want to use a relay to avoid sending much current through the switch.
You can put a manual inline switch if you want to switch it off for water wading

Like this but without the de-mist section

what will happen if it not turned off, will it speed up the water gettin into the engine bay?

The fan will just spray water throughout your engine bay and increase the chances of getting the electrics wet.

It's always good to have the option to turn them off

this is always a good one for reference wiring in fans with a thermoswitch.
