I can't go up hills or rev too high without all manner of coughing and spluttering. Timing is spot on, right needle and spring in carb, carb tuned accordingly and two new fuel filters, anything I might have over looked? Carb adaptor isn't freezing up either.

Mine coughs and splutters when it's cold. I did have a problem with air starvation once when the old air hose gave up and was suffocating the engine. Also, years back when I first passed my test, the fuel system was full of little rust flakes, which completely blocked the fuel filter and would also sometimes block the pickup in the tank.
Sounds like it's being starved of something to me, OR maybe you're losing a cylinder at high revs. Have you cleaned and gapped your plugs recently? If the gap is too big they can drop off at high revs.

Checked gaps, all fine, its just got no power, at idle I can rev it as high as she wants to go, its when there's a load behind her it just has no pull, I'm going down the gears the further up a hill I go, very frustrating!!

The dreaded sludge...in most cases that's the head gasket gone. Not too hard a job to tackle. Hope you get it all sorted.
