potentially a newcomer to offroad!

Hi all,
My names rob and im from west yorkshire,
I currently own a 2.0 zetec ford cougar, ive owned classic cars aswell as a few moderns ( standard and modified) im 21.
Me and my girlfriend both like classic cars but know the amount of work and money they command in regards of welding and bodywork not to mention mechanical repairs they need. Using a classic everyday would not be too realistic when we both need the car to get places i.e work and im the only one driving at the moment.
So came across a suzuki vitara 4u2 model in blue and silver yesterday and having had a quick look around it, we came up with an idea of going off roading instead. As it would still be a reliable everyday car too.
We dont want something too thirsty or big ( as it would also be on L plates for when my girlfriend is learning to drive).
Can anyone recomend any other 4x4s perhaps? With similar mpg and for around the 1k pound mark?.
What modifications need to be done for novice type off roading in a vitara?
Are there plenty of places to go off roading ?
Do any of the sites allow people without a license to go mud plugging ? I.e girlfriend extra experience driving.
