Malatesta Kaiman's, because I already have a set and I know how good they are!
Also, your pic reminded me of this:
1985 SJ413VX (SJ50V) with SPOA, rear disc brakes, 31x10.5R15 Kaiman Malatesta tyres, an MOT and a lot left to do!

I guess you don't have much mud over there really Geoff?
I'm a fan of maxxis tyres, I would go for some bighorns
or maybe some BFG KM2.
Those are my two choices for my LWB, I'm probably going to go for the maxxis.

I also like this one...
1.6 16v, Rock Lobster, PAS, Muddyzook rear disc conversion, coated in Raptor, 33in x 10.5, heated seats, lovingly restored by Scottie!

Not much mud Scottie. But during Jan and Feb, we actually have flowing streams and there are some good muddy/boggy bits if you know where to look.
