Don't suppose you could post a few photos up at some point Joe?
Sounds like a real strange one. When i dismantled mine it was on solid but it didn't dent. Just bashed it all the way round till it popped off.

Mine was like this and was bending and denting. Luckily I had the engine out of the truck so it was a bit easier on the knife.
I can confirm that the knife is the way forward.
Get it slit a bit all the way round then try pry and hit it a bit more, then more knife, then more pry and hit, then more knife, then more pry and hit, then more knife, then more pry and hit, then more knife, then more pry and hit, then more knife, then more pry and hit, then more knife, then more pry and hit, then more knife, then more pry and hit, then more knife, then more pry and hit, then more knife, then more pry and hit,
You get the idea!

Could try soaking the joint in a solvent of some sort or thinners maybe?

Or were you had the knife just get a hacksaw blade and cut the gasket bit trying not to damage the two surfaces

yep!!!
there was no gasket at all! it was just some really sticky silicone, so it was basically metal on metal, thats why the knife got stuck.
but i used the most usefull tool i have, my marvelous multipurpose dad:) (not saying that hes a tool at all though)
he came up with the idea of putting a sisor jack on the chassis to push against the sump and it worked a charm, poped straight off. well recommend this procedure for anyone with this problem in the future.
